Capsicum is a great vegetable to eat for your eye health. With this week being World Glaucoma Week, we wanted to share with you the benefits of this vegetable as it is one of the foods to eat for improved eye health. Capsicum is a favourite among those living on the Gold Coast and can readily be found in supermarkets and at your local farmers market. Capsicum is also known as peppers or bell peppers, although most locals call it capsicum. It comes in different colours with red and green being the most common here in Australia. Capsicum can be eaten raw or cooked, which makes it quite a versatile vegetable.
Capsicum is packed full of Vitamin C and this is fantastic news for your eye health. One of the benefits of Vitamin C is that it may reduce risk of cataracts and macular degeneration. You will also find Vitamin A in this tasty vegetable which may protect against night blindness and dry eyes, another reason your eyes will love capsicum!
